It's not apeture, it's shutter speed. Higher shutter speed - darker background
 
The aperture determines the amount of strobe light that gets to the chip/film in the brief time that the strobe fires (1/1000s of a sec). This is adjusted so that the foreground subject is properly exposed. Like DiverLS said above, background colour is determined by shutter speed- 1/60 or quicker for black, and longer for lighter. i find i get a nice green monterey background around 1/15 or so.
 
What aperture do you need to use to get those photos with all the background turning black?

as said it is faster shutter speed.Just make sure that the strobe is in sync at the faster speed on your digital camera.I sometimes go to 1/500 or more with an iso of 100 or less for those images.
