I love Chinese and Thai food.

I'm looking for an egg foo young recipe and the gravy that goes with it.

There are a few different ways to make it, here's one of the "quick & easy" ways:

3 eggs
1 c bean sprouts, blanched
1/2 c pork, cooked, (ham, chicken, turkey, lobster, shrimp, crabmeat, etc)
2 tb peanut oil
2 tb green onions, sliced the long way & lightly chopped
1 tb soy sauce

Beat eggs until thick; stir in sprouts, pork (shrimp, crabmeat, etc), green onion, and soy sauce.
Heat oil in skillet & add pour in some of the egg mixture a little at a time.
Using spatula push eggs as they set over meat to form pattie.
When pattie is firm, turn over to brown other side. Serve with sauce.


Egg Foo Yung Sauce:
1/2 c chicken broth
1/2 ts sugar
2 ts soy sauce
1/4 ts sesame oil
1 1/2 ts cornstarch solution

Mix cornstarch in about 3 ts of water.
Mix all ingredients together. Bring sauce to a boil to thicken.
Increase the cornstarch slighly for a thicker sauce.
For some variation a little ground ginger & 5-spice powder can be added (about 1/4 ts ea)

In some of the other recipes the mixture is deep fried, something I always get yelled at for doing.
Imagine trying to make fritters w/o deep frying...
 
ok, how about hot and Sour soup that is actually GOOD! I have tried some of the mix things from the grocery story. UCKY!!! But I could just live on hot & sour if I could figure out how to make it. Thanks

Geeze, there are a whole bunch of ways to make the Hot & Sour soup, the best use some ingredients found only in Asian grocery stores, like lemon grass & kaffir lime leaves.
Here's a "quick & easy" recipe that uses common ingredients:

1 can condensed chicken broth
2 Tb white vinegar
2 soup cans water
1/2 tsp Tabasco
4 oz sliced mushrooms
1 beaten egg
2 Tb cornstarch
2 green onions & tops
2 Tb soy sauce

Combine chicken broth, water, mushrooms, cornstarch, soy sauce, vinegar and Tabasco in medium saucepan.
You can adjust the hot/sour by adding more or less vinegar & Tabasco.
Bring to boil over high heat, stirring constantly, until slightly thickened.
Gradually pour egg into boiling soup, stirring constantly in one direction so the egg sets in threads.
Remove from heat; stir in green onions.
Garnish with additional chopped onions or cilantro, as desired. Serve immediately; you have to eat this right away as the egg & cornstarch don't play well being reheated.
You can sneak a little shrimp or crab into this too. :wink:

Ummmm. Egg foo young only has gravy in the West. No "authentic" Chinese that I know would would put gravy on it. Then again, i still can't find any Chinese thata have heard of fortune cookies either.

Really. That is so interesting! I had no idea the gravy thing was something we only do here.
And fortune cookies are only given out after dinner in the west huh? The things you can learn on scuba board.
