As an art form, I enjoy using photoshop (other photo editing software will work if they has layering capabilities) to make composites. This usually means giving your subject a different background but it can also include creating montages or other effects with your photos.

Here are a couple of basic composites that put a different background behind a subject. The quick and dirty explanation is to use a layer mask to select the parts of a picture you want to erase, with your new BG on a layer below. Depending on the subject, this can be easy or very time consuming.
