To add to the Aqua Safari info, their fast boat goes out for a 2-tank trip at 1pm if there are enough divers (min. 4, I think.) But you would have to ask them if it gets back in time for you to make your ship's departure time.

Chris, I strongly recomend Aldora Divers. My wife and I just returned from a week in Cozumel and we dove several days with Aldora. They do accomodate cruise ship folks with a later boat. These guys are professional, use fast boats, and proved extra large tanks. You'll typically do 1 hour plus dives with a great surface interval at a nice beach club.
