If your non-diver is a snorkeler and/or would be interested in a great whale watch trip and hang out on a boat for a morning, you could consider booking both of you with Lahaina Divers to Molokini. It's a fantastic whale watch/sight seeing trip on the boat down to Molokini (about an hour), and the snorkeling is still pretty good mid-reef where the boat would likely be tied up. If your non-diver isn't interested in snorkeling, Lahaina Divers' boats are big enough to have lots of room to hang out either in the sun or shade, or both. They also provide snacks, so you don't need to take food or drink with you.

If you've never been to Maui, I'd say diving one (or both) of the Cathedrals on Lanai is a "must dive".
 
Dive front back and sides of Molokini, it's worth it. Since you are at Kaanapali, snorkeling at Black Rock is worth it as well
