All this sounds really exciting and I am eager to go now.
Any suggestions for well priced, short duration dive shops that can take you out?
Do I have to book well in advance or just show up with gear and go?

I recommend you call ahead and book your trip so you can get the trip you want. There are many options for wrecks and reefs.
Most of the operators schedule a morning two-tank trip. You board the boat around 8 AM and then come back in for lunch. After lunch they do another two-tank trip and you're back on the dock around 4PM.
If you're not sure where you're going once you get on the reef I strongly recommend going with an operator that offers a guide to get the most out of your trip. I've checked several of the operators and you usually will pay $30 more for a trip with a guide as opposed to the smaller operators where they shuttle you out to the reef and then you're on your own.
