What is your budget? How old and how experienced (in terms of diving) are your kids? How much diving do you want to do (should it be the focus, or just something you do a few times)...
The Bay Islands of Honduras are a great place to dive and snorkel (easy conditions and good for all experience and skill levels). If diving and snorkeling are going to be the focus of your trip I would suggest Utila. Roatan is larger and there are more things for you to do other than dive. Roatan can be more expensive and Utila is more laid back. There are a lot of websites on both these islands so a simple search willprovide you with loads of info.
