Down here in south florida we have something called mojo marinade, it's a couple bucks for a pint bottle. It's great on fish and chicken. The way I grill mahi is to start off with it flesh side down over the grill. I coat the fish with the marinade before putting the filets on the grill. When the flesh gets a little brown I flip it skin side down, put on more mojo and cover it until done.
