Could I buy two octos insted of buying a plain old reg and octo. I want two Dacor viper Octos (Yellow)
 
Yes, provided the 2nd stages are compatible with the intermediate pressure your chosen 1st stage (the thingy attached to the tank). Most are.

You should designate one of the octos as the "primary" when you next take them in for service, then the reg tech will adjust the cracking pressure of that one lower for easier breathing; while leaving the cracking pressure on the "secondary" higher to lessen the chance of a freeflow.
