I'm in houston..
I highly recommend the flower gardens (Fling referenced in an earlier post).
I often go to spring lake (aquarena springs in San Marcos). You need a PADI specialty course to do the volunteer diving. But it's totally worth it. The Texas clipper in south padre is legit also.

Of course there are the lakes...
