A couple of questions here as a complete outsider to the cave diving community.

How deep are most cave systems in Florida?

Other than Florida, where can you go cave diving in the US?

Next to Florida... I'm going to take a wild guess and say that Missouri, Tennessee, Georgia, Alabama, and Arkansas have probably got the next highest concentrations of accessible springs/sinks with UW cave. Most other states have some sort of underwater cave in the form of springs, sinks, sumps, flooded mines, etc.

How deep?... Well... Thats a tough answer as they range widely from a couple feet deep and lots at 300'+. I think Weeki Wachee still holds the deepest Florida cave record at over 400' deep.

Texas has one over 500' deep.

That being said... There is lots to dive within recreational depths.

Training is a must in any of them. You drown in 5' of water as dead as in 500' of water.
