SSI and PADI are essentially the same in terms of course outline, material covered, etc... get recommendations on a good instructor instead.

Chances are if you talk to your LDS about any apprehensions or anything you have, how comfortable you are in the water, etc... they'll try to match you with an instructor that can best deal with your situation.
 
At least with regard to PADI standards; free flow reg breathing is taught in confined water but not required in open water.

There is a lot of variation in instructors, with both good, bad and average in all of the organizations... so while I might be partial to NAUI, (instru #4186), in the end, it is the combination of what the student wants to get out of it, and the quality of the instructor.
Well said! At the OW level, you will find more similarities than dissimilarities in training. Each of the three major certifying agencies (PADI, NAUI, SSI) have a certain structural approach, but you will end up with equivalent core knowledge and skills. As Puffer Fish suggests, a lot of the 'enjoyment' and therefore value you get from an OW course may reflect the instructor.
