I use the medical shears with the large plastic handles. Much easier to use with big bulky gloves on. Also, the medical shears have blunt tips so they won't pierce anything accidentally.

I couldn't tell from the website if this is the case with the Ti Shears, but all the specialty kitchen shears I have come apart. Where they screw together it's something like a toggle so they two pieces (handle & blade and handle & blade) can be cleaned. They can get pretty gunky when working with food. If you decide to go with the Ti Shears you'll want to make sure they don't separate because if they do, I'm sure they will unitentionally underwater.
