What do you use to track equipment usage for maintenance?

you've been duped. There are no "consequences" to be paid by going too late. Regulators work until they don't. Buy an IP gauge and check your regs once a month or so. If the IP isn't creeping and the second stages aren't leaking, there is no reason to service. Using them that often will be better for them anyway. Go on the age recommendation not the number of dives recommendation if you're going to follow a schedule, but they likely won't even need that
Is that advice also valid for ocean diving (as opposed to freshwater)? I'm not sure whether buildup of salty crust from years of use will be detrimental to the function of the regs, in the long run.

if you are soaking and rinsing them properly, especially if it's a sealed diaphragm, then yes it applies
 
One like this, with the quick-disconnect, allows you to check your IP for creep every dive while your're fiddling around...... or hydrating, or eating a baloney sandwich etc. etc.

Also works well in the basement WITH a second stage to relieve pressure.

You can attach a quick-disconnect to any gauge you like.
