There's actually a ton of stuff to do on the Disney property without ever paying to go into any of the parks. The hotels are fabulous - Animal Kingdom Lodge gives you a view of the animals, Beach/Yacht Club and Boardwalk have shops and street style entertainment. Downtown Disney/Marketplace/West End has food and shops. There's several mini golf courses, even horseback riding and petting zoo at Fort Wilderness. There's the whole sports complex too.
