I'm trying to consolidate and update my kit. What's a good option for a back mount bc that I can teach in (OWSI) but can also be converted to a good doubles setup, and is also reasonable to travel with?

Since you said "good", get two dedicated wings (one for single tank and one for doubles). You can easily get by with one backplate, especially with a single tank adapter (instead of threading the tank straps through the slots in the backplate).
