Yeah, they are really antennae, but so often we call them tentacles, and bugz.

I will usually poke something into the hole, whether it be a tickle stick or a spear gun, and I will either scare them out and grab the carapace. I have also carried an aluminum rod that I have hooked over on the end to try to coax them out just enough to grab them, they are fast little suckers and I have lost just as many as I have caught.

If I cannot grab the carapace I don't even bother, they will drop their claws right away if you grab them there.
