How easy is it to move around second stages?

Take off the second stage and hose from the reg you are not going to use. Remove the port plug where the second is to be placed and immediately put the plug in the open port in the first reg. Screw second on to open port on first, it should spin on easily until the o-ring engages. Insure it is tightened a bit more than finger tight so it won't back out on its own, most experienced divers, or a tech, can give you the feel for it since it is not rocket surgery.

Keep your eye out for a gear mentor, all equipment checks and most adjustments and repairs are not all that difficult. Just being able to give your gear a good through check will make you a safer diver.

Eventually you'll have acquired enough regs that you'll end up with one set for doubles and one for single tank. With used regs going all the time on the boards it ends up being pretty cheap. I much prefer it anyway, no messing around swapping hoses, trying to keep track of port plugs, etc. The price of being a tech diver, you end up acquiring enough stuff that you just go to your tool box....
