You can also call the dive ops and ask. I don't recall needing to worry about it, especially diving out of Jupiter.

It's not guaranteed, but like the grouper aggregation in September, everyone wants to see lemon sharks in January. Without seeking lemon shark dives specifically, I have always had lemon shark dives in January.
