I keep hearing the diving in the Keys is really bad, but I never had a bad dive there. On my last dive in Key Largo we saw a Grouper around 300lds swimming with a Blacktip, next to the wreck we were diving. I know the reefs aren't what they used to be 20 years ago, but they have made a comeback in the last five or so.
 
For the diving I would suggest Little Cayman Beach Resort - some of the best diving available on this side of the world, easy to get to, very professional boat and dive crews, excellent food. I would only go there, however, if your wife is certified as there is very little else to do on the island. Little Cayman for me is one of the most beautiful places I have been, and is very relaxing.
