I usually wear a full 3mm. Others diving on the boats I've been on are a 50/50 mix of shorties and full 3mm. I tend to get cold after a couple dives and the full length helps with that. It also keeps the fire coral off me when another diver inadvertently kicks it up and you unknowingly go through a cloud of it. Full takes longer to dry out overnight, and it's usually still damp when I put it on the next morning if I'm diving consecutive days.
 
We wear 5mm jackets. Sue gets cold easy, and this is perfect for her. I tend to unzip mine a bit and let more water flow through it to avoid getting over heated.
 
i will probably take my pinnicale 3mm with wool. some say it is as warming as a 4 or 5mm. you don't really need all that warmth in may but i go with an op which uses big tanks and stays down longer.
if you will be diving for 5 or more consecutive days there is a cumulative effect. the deeper you go the more compressed and less warming your suit becomes. i guess that is my way of saying what is perfect for one may be too much or too little for another.
we lose a surprisingly large % of our heat through our heads and mine has not had any fur on it for decades so i like to use a beanie as well.

Bare 3/2mm suit for me. First dive I can get away with nothing but shorts but I get a bit chilled on the second so I wear something.
You really don't need much.
