On the Garmin, I see one of the selling points is the quick release pins that hold the watch band on. When I hear that, I kneejerk to thinking of a $1500 piece of reef jewelry. I may be over reacting.

You're over reacting. Its actually a metal hook that is positive locking over a crossbar.
 
What would be ideal is a NATO strap with a bit of a stretchy section sewn into it.
I was just thinking the same thing. Kinda like on a pair of jeans with a stretchy waist. I would thread through the pin areas and accommodate some compression at depth.

What length Nato strap would be needed for something like the Teric over a cold water drysuit?

Nice! I might have to order a couple of those!

For drysuit, I think my straps are 17". I don't think you'll easily find a NATO strap that long other than the non-stretchy kind (which are still hard to find in that length). But, I also don't think I need a stretchy strap for my drysuit. The drysuit sleeve is compressible enough to put the Teric on with a non-stretch strap and still have it stay put. At least, for me, with my suits.
 
BluShark ones are longer (11.2" vs 10"), and they are Buy 2, Get 1 Free. So, I just ordered 3.... :D
Yeah, I was actually thinking I would prefer the other one since it seems to be a fabric and elastic blend until you mentioned the length and my bare wrist is about 8 inches.. The one you bought looks like it's the Nato strap equivalent of a bungie.

You can see that its hooked over and there is a retainer. The lock is pretty stiff too.

I've survived tons of tumbles on waterskis, wakeboards, etc with the Fenix over the years with no issues (knock on wood). I think the band attachment system is at least as secure as the others out there.
