I don't like shore diving,

Define shore diving.
-You talk about 100 yd swims in heavy wetsuits
-You talk about climbing over rocks in surf
and I am with you.

Casino at Catalina. You gear up on a bench. You walk down 4 steps and you are immediately in a kelp forest. (at least used to be a kelp) You walk up the 4 steps, turn in the tanks right there, and then walk down a few blocks for a nice meal. My kind of shore dives. Easier than a boat dive and more relaxing.

More than three dives in a day. As much as I love diving I have never made more than three dives. I get bored during a third dive so I usually make two dives. Many of my dives are well over an hour long, some over two hours so after two dives I'm done.
The rest of my opinions, nitrox, deep air, solo... have all been beaten to death.

I think it's possible to enjoy the safety stop

I am with you on this. I really enjoy some of my safety stops- like the one in Islamorada, FL - when a 6 foot nurse shark decided that she'd just hang out with me the entire time, 6 inches away and act like a puppy dog that wanted attention and petting. Needless to say, the 3 minutes turned into quite a few more.

I did it twice. (2013 and 2014) First time was with private DM. I went to his shop and got fitted. Next day we took the ferry over. He took care of most of my gear. From ferry it is a short walk to Casino point. You get tanks and weights from a van at Casino point. Loved the dives. After the ferry ride back he returned me to my hotel. The second time I knew the drill so just went over on the Ferry by myself and met a DM at the docks. Then we went over to the point and did our two dives. Both times was good viz (to me) and saw a lot of fish and creature life. With the private DM he and I did nice long dives. We got into some of the deeper areas out past kelp so depths were 76 and 68, dives were 45 and 46 minutes, water temps in that Dec were 59 and 60. Note that because you come up through the kelp/plant life you are looking at fish life the whole time. The 2014 dive was with Catalina Divers Supply.

If you have not dove Kelp it is awesome. You can also dive the Pt Loma Kelp beds with a quick boat ride out of San Diego.

I ran over for the day. As they put it
"Your planning should work out without any issues that I see. The 6:15 departure is very early but jet lag is in your favor. (I am from NC so my body thought it was 9:15) I believe there will be a 3:45 pm departure back to Long Beach leaving you plenty of time to get lunch and relax before the return trip. Feel free to book the 8 am dive through our website www.catalinadiverssupply.com and then send an email to confirm your second dive at 10 :00 am. Our online system will not allow the second tank so we will do it on our end. "

There are lots of nice places to eat in Catalina

The Ferry ride is neat. It is a huge jet powered boat with comfortable seating. You can get food and adult beverages. Once on the way over we passed by the largest school of feeding dolphins I had ever seen. It stretched to the horizon. Everywhere you looked dolphins were jumping and feeding.

If I had the time I would go over for a couple of days.

Unfortunately, I haven't been on a liveabord yet (I'm planning it though), and I guess that 4 or 5 dives might make me a little bit tired, but just a little bit.
I've done several triple dives, sometimes in hard conditions, but it wasn't enough to make me tired...
The ultra-running thing is also a mental training, that helps to manage the tiredness by controlling the level of stress your mind go through during those hard long runs (my favourite races are 80 or 100 km, and I never run anything shorter than 50 km)...

Yes, try to do a 12-day liveaboard trip, racking up 40 dives (I did) and tell us how you feel. :)
