Can I use the Poseidon Xstream 2nd stage with an Atomic Z2 1st stage?

yes, but you will need to retune the atomic 1st stage to the lower IP for the poseidon and also add an opv if you do not use a conventional octo with it or put two poseidon servo 2nds on it.
