There is the 8ft fiberglass chicken at Twin Lakes, only an hour drive away. My avatar picture was taken at Twin Lakes.
 
Cold Lake ( 3 1/2 hours North East on hwy 28 ) has a really good underwater course at English bay. A shallow nav course and deeper a couple boats , BBQ , underwater bells , casper the ghost , etc. Starts in 14 ft and goes out to 56ft +.
14mm wet minimum , dry suit the best. Vis is 6-8 ft average so compass skills are a definate plus.

My personal favorites (Alberta-wise) are Lake Minnewanka (Banff)
& Lake Patricia (Jasper).

These are both a little far from Edmonton though. Not day trips...
