I took a little Canon S90 and a Canon G1 X out to Galapagos in the summer. As other posters have mentioned the conditions can be quite challenging, particulary around Darwin & Wolf, so I would stick with a smaller camera which will allow you to concentrate on your bouyancy as well as taking pictures.
Here is a link to the pics I took with both of the Canon cameras whilst in Galapagos to give you an idea of quality. The S90 (which is an old model of the S100) and the G1 X are not going to compete with a full blown DSLR, but you can get half decent images as a reminder of your trip.
