Best Mexican coffee act I have ever seen was done at El Parrilla Cancun centro. The waiter stands on a chair in the dining room and pours the lit coffee into the chafing dish about a four foot drop while they lower the lights. I learned how to make it at the Culinary Institute Hyde Park about 35 years ago and believe it is still taught today.
 
A couple weeks back I was able to watch it prepared at El Moro, it was spectacular. Next time I have dinner there I plan to order it.
