pm lizard leg. he might have some insight. he isnt an instructor, but rather a 1 legged diver.
 
Not an instructor but was on a dive boat with a one leg amputee several years ago - I think in the Keys with SW. He just removed the prosthetic and dove with one leg/fin. It did not seem to be a big deal for him.
 
I do work with SUDS and have dealt with many amputee divers. My biggest bit of advice I can offer is be there to assist, but only if they ask. Some had swim legs and some did not. Just treat them as normal am let them know of they need the assistance you will help. All of the OW, AOW, and Rescue classes I have helped with were conducted just like normal.
