Try Little Cayman if you dont want touristy. Its very private and slower paced than Grand Cayman.

I highly recommend Dominica. The best hotel to stay at is Fort Young. Make sure you ask for the updated rooms with the water view.
We enjoyed hiking to the many waterfalls and they have natural mud baths. They also have ziplining. So beautiful and clean!! Don't bother renting a car, the tour operators will conveinently pick you up at the hotel. You won't be sorry by going here. This is truly an unspoiled island with natural beauty and it looks to stay that way. I would go back there in a heartbeat.
I just noticed you chose Saba, so maybe for your next trip after that!! Enjoy!
