There are a ton of thing you can do in both confined and open water.

I'm in the dive well a lot so, when people want to stop by to practice, I end up inventing a lot of "composure" and basic skill drills.

Perfect Bouyancy - with a blackout mask
Laying and taking up line - with a blackout mask
Gear removal and replacement - blackout mask
Throw gear in the far end of the pool w/ the air off. Throw mask and fins in on other side. Have them put fins on, clear the mask, go turn on the air and gear up underwater.
Swim around w/ blackout mask - have buddy simulate failures/entanglements - turn off air, unhook gear, pull out reg. (get your buddy's permission beforehand)
Pull random OOA drills when people are distracted.
