Non-Adjustable Regulators don't have any type of knob that you can adjust the airflow in the 2nd stage of the regulator. If you read around, you will read both views on whether this is really necessary.

BTW... I dive Mares regulators and BC and am very happy with both.

Many regs deliver different amounts of air at different depths and so use the adjustable knob to compensate. Due to its design (I don't know the technical reason) this is not an issue on the abyss. I have hung upside down and laid on my back and faced up toward the surface at 120' and it breathed just fine. I have also heard of people using it to dive the Andrea Doria at about 220'.

Take an equipment class at your shop - you'll learn plenty.

The most important thing is to buy equipment that can be serviced in your local diving area; and stay away from exotic brands, go with the tried and true until you've dived a lot.
