would you say night is worth it?
It's not bad. I did my night/limited vis course in the middle of the day. Visibility at the site is decent, the water is just rather tannic, so light doesn't penetrate very far. That might be a bit intimidating at first, so probably not a bad idea to go on that first dark dive with someone who is experienced.
 
cavern is near the peak of my list, at least top 5 when i get comfortable enough to do. the first 20m of a cave are probably gonna be the coolest for me anyway!

do you know if SSI has a like, wreck penetration within the light zone type course? thanks!

Remember night diving courses include limited VIz, which is why I like to teach it with navigation during the algae blooms in spring. Due to these conditions, I only teach 1:1.

SSI wreck course “teaches” you how to dive outside of a wreck. It is a prerequisite for the advanced wreck which teaches you wreck penetration.
 
Whats your favorite/most important advanced class to take? I am very interested in getting quite a few of these (already have my EAN), and was wondering what yall have done before, and what you have gone to complete first.

I also agree with Rescue as pretty much everyone does.
I've taken the ones you list. Night was OK but only if you dive at night-- I suppose it can help for low viz diving, so they say. Wreck is OK, but not really needed unless you penetrate. If you penetrate, the PADI course is for very "easy" penetration-- I wouldn't (and haven't) gone inside a wreck without a more advanced wreck course. Nav is good--it doesn't hurt to know anything that you learn there--I found it very interesting. Deep is good because you get the experience of 4 dives under supervision of an instructor.
The other ones I took were--
PP Buoyancy-- you shouldn't need this if you follow the rules of weighting/trim and dive regularly.
Equip. Specialist. Interesting but not much really useful knowledge that you can't just read about.
Nitrox-- Good if you dive Nitrox.
I didn't take S & R (only did one dive as part of AOW), but I would think this could be very important.
