Crabs from Florida taste like amonia?

I am a Marine Biologist that dives St Andrews frequently. Yes they are stone crabs and if not put on ice w/in minutes of catching they will smell like ammonia.

The stone crab has a urinary track system that goes throughout its whole body. If not put on ice quickly the urine will start to leach out and into the body.
