Something I recently discovered to keep down the rust. Coating your knife blade with olive oil works better than coating it with silicone. It has the added advantage of not adding chemicals to your food when you stab a flounder.

Maybe one should coat it in a mixture of olive oil, salt & pepper then?

Pepper maybe, I personally don't use it, but salt is added automatically by the sea.
