Why is slow inflation a good thing?

If you're using a wing properly, it should require major adjustments... just tweaks to adjust buoyancy. I wouldn't want a wing that inflated too rapidly as it could result in a rapid rise to the surface.
 
I have used HOG buoyancy cells on CCRs, steel doubles, and as a SM harness. Never had any issues at all. Never really noticed any speed difference from the rank and file inflator since most use the same third-party unit... price-point is always competitive.
 
Slow inflation is considered desirable because it means that it's easier to deal with a runaway inflator. Gives you more time to figure out what's wrong and fix it before you're flying to the surface like a Polaris missile.
