A couple of my buddies that have long hair and dive dry use a lycra hood. They have have stitched them up themselves and if so it should be quite simple. The put the lycra hood on. Tuck all their hair into it and then don or doff.
Other than that it's pony tails, braids or such.

Hey that sounds even better than the plastic hoodie I saw the other day. (*BTW ABQdiver I forgot to ask about the hood when I was at my LDS...but I'm sending them an email tomorrow about some gear so I'll include my query then...)
