How many dives/day do you want to do, and how many total for the trip? What I'd call the 'standard practice' at a places is a morning 2-tank boat trip.

Some places, like Little Cayman Beach Resort & Cayman Brac Beach Resort IIRC, offer that plus a single tank afternoon dive. So, 3 dives/day, maybe some limited (not daily) night dive offerings at an added fee. I'm told Grand Cayman has at least a couple of op.s offering 2 2-tank boat trips/day.

A full on live-aboard may be offering you 4 dives/day plus a night dive. If you dive 4 or 5 times/day, you won't be off hiking and kayaking much.

How much time can you devote to this vacation? If it's just a week, I'd consider against Dominica due to travel time spent. 2 Weeks, I'd read up on Dominica and consider maybe diving Belize and spending some time on the mainland attractions. Where Belize is concerned, the best diving (e.g.: the Atolls, Turneffe Atoll) is farther out farther from the mainland, which is where some fine attractions are (e.g.: view & climb atop some Mayan ruins, rainforest walks).
