When I lived in Melbourne I did my diving through AB Ocean Divers in East Bentleigh (a sourthern suburb) and through the Melbourne University Underwater Club (MUUC).
There's heaps of stuff to see and do around Melbourne and being that you're coming from Ontario you won't find the water cold...
I don't know the tax differences but whatever you do don't let the shop ship your stuff with UPS or you'll end up paying twice as much. UPS charges some obscenely high brokerage fees for importing stuff to Canada from the US. Just do a search on UPS and Canada and you'll read some horror stories.
With my OMS 32, I use a standard (23 or 24 inch hose). The corrugated hose is fairly short so it bows a little (I could probably drop down to a 15 inch inflator hose).
One thing to keep in mind is the bag size limitation. American/Air Canada etc all limit bags dimensions to 62 linear inches (length + width + height). Anything larger than 62 inches will be considered excess baggage and charged accordingly.
A junior size hockey bag works great although you might not have much of a selection in SF. Just wrap the BCs in your wetsuits and clothing to protect them.
Sharkwater is a great movie for both divers and non divers. I took three of my non diving friends and they thought it was great. It lead to a spirited discussion at the pub after about all the misconceptions they had about sharks and how people can stop the sharkfin trade.

Newbie question, but if the tank has been sitting undisturbed for 8 months could the gases have settled with the slightly heavier O2 on the bottom with the light N on top?
Dive Rite makes a great bellows pocket that attaches to your harness. It’s big enough to hold my SMB, slate and finger spool.
It’s also about the length of a can light so if you dive a long hose you can route the hose under the pocket...
