The only animal signal ive ever had to use is "lobster" for which I make a claw with my hand to mimic a lobster claw. Anything else I will generally just point at whatever it is I want to draw attention to :)
 
Adding a couple not mentioned yet. We have awesome DM's here. I stick close by as you learn and see a lot.

Napoleon Fish: Fist on forehead
Nudibranch: extended forefinger and middlefinger (like the V-sign), extending, flexing, repeat
Glassfish: Simulate sipping from a glass
Crocodilefish: Palms together horizontal, clapping but with wrist together (croc jaws)
Potato Bass: Fist
Scorpion fish: Index finger simulation scorpion stinger
Paper fish: Right hand on its side on left palm. Move right hand sideways continuously, simulation paper moving in current
Salute to indicate Sargent Majors
Unicorn fish: Extend index finger from forehead
Pipe fish: Simulate playing flute
Cuttlefish: Rocking a baby
Goatfish: Two fingers off your chin
 
Anyone know the sign for Jewfish (grouper)? These fish make a lot of noise on the reef and it would be great to know the sign.
 
For a male grouper, grab your crotch. For a female grouper, grab your breasts. Like a Groper.
